Charging Clients

I made a chart with 3 main products and an aproximate of the remaining options for each.
But it's more of a guideline than a rulebook to paraphraze a Disney character. It depends largely on the client (i.e. i would charge differently for a site for mercedes and one for a local flowershop), on the timeframe the project has, the way the project is layed out (i.e. if it's well detailed or the client doesn't really know what he wants and asks for several redesigns).
It's far from an exact science and i have a lot of blank spots on the subject but i don't think that carging hourly would work for me. a more practical aprouch would probably be laying out several drafts (usually 2 or 3 from wich the client can choose), getting paid for a part of the work and them and then getting paid for each revision.
I've made a few websites for people and am always left scratching my head over what to charge. I ended up charging an hourly rate and keeping detailed notes of time spent on a project. How do you guys normally handle charging clients? I'm sure there must be a better way of doing it, and how do you decide what rate to charge?
